Use your ICEY-TEK cool box to create amazing sourdough... yes, honestly!

If you bake your own sourdough bread you'll know that a cold house is really detrimental to your starter and the consistency of your results. We've been baking our own sourdough with varied success for many years. Our house gets very cold overnight and our sourdough starter really suffers. After asking a fellow baker whether they had invested in a Bread Proofer they replied: 'why don't you just use one of your amazing cool boxes along with a cheap heat mat'? Of course! It's annoying when someone points out the obvious solution you've been blind to all along.
So, we took our trusty 40 Litre ICEY-TEK along with a heat mat and experimented with different temperatures. Let me tell you, anything above 18 degrees C is too much! Even though it is less than room temperature, the insulated qualities of the cool box will trap heat and push the temperature higher. In the end we've stuck with 17 degrees C. This allows for a daily starter refresh resulting in a consistent and bubbly starter at all times. We make our sourdough loaf as a really wet dough and pop it into the cool box last thing at night. By 7am the dough has risen just to the top of the loaf tin and is ready to rock. Be warned, if you hit snooze on your alarm and opt for a lie-in you will find that your dough has got too excited and decided to escape the tin.
We hope this finds its way to one of you whose cold house is making things difficult.
PS – No airing cupboard in our place, we're on a combi boiler – just thought we'd get that in there first 😀
